Amaranth was already a popular crop in the Aztec and Incan empires, where it was considered equivalent to beans, maize and potatoes. The Spanish colonizer Cortez banned its cultivation in 1519. By then it had declined somewhat and was only found in the more remote villages, but was rediscovered a few decades later.
Although it is commonly known as a cereal, it does not contain the agglutinin (WGA) characteristic of wheat. The flour extracted from amaranth seeds is processed into a chemical-free, cold defatted raw material. Use the flour for baking and cooking.
