Matcha is a fine powder made from green tea leaves. It has a bright emerald green colour and a rich, herbal flavour. The tea plants used to make matcha are shaded for a few weeks before harvesting, resulting in a dark green tea leaf with higher levels of chlorophyll, caffeine and l-theanine. The tea leaves are steamed after harvesting to stop the oxidation process. Ceremonial Organic Matcha is a high quality tea traditionally used in Japanese tea ceremonies. This type of matcha is made from the youngest tea leaves, which are hand-picked and ground into a fine powder. It has a delicate flavour profile with a slightly sweet aftertaste. It is generally slightly more delicate and nuanced than culinary grade matcha and is best consumed on its own, not just with lattes and other sweets.
